**Ingredients:**


- 2 cups cooked rice (preferably chilled)

- 1 lb (450g) chicken breast, cut into small pieces

- 2 tablespoons vegetable oil

- 1 medium onion, finely chopped

- 2 garlic cloves, minced

- 1 tablespoon ginger, minced

- 1 red bell pepper, diced

- 1 cup frozen peas and carrots

- 2 eggs, beaten

- 3 tablespoons soy sauce

- 2 tablespoons sriracha sauce (adjust to taste)

- 1 tablespoon oyster sauce

- 1 tablespoon sesame oil

- 3 green onions, chopped

- Salt and pepper to taste

- Optional: chopped cilantro and lime wedges for garnish





**Instructions:**


1. **Prepare Ingredients:**

   - Make sure the rice is cooked and chilled. This helps to prevent the rice from becoming too sticky when fried.

   - Cut the chicken breast into small, bite-sized pieces.


2. **Cook the Chicken:**

   - Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.

   - Add the chicken pieces and cook until they are browned and cooked through. This should take about 5-7 minutes.

   - Remove the chicken from the pan and set it aside.


3. **Cook the Vegetables:**

   - In the same pan, add the remaining 1 tablespoon of vegetable oil.

   - Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent and the mixture is fragrant, about 2-3 minutes.

   - Add the diced red bell pepper and the frozen peas and carrots. Cook for another 4-5 minutes until the vegetables are tender.


4. **Cook the Eggs:**

   - Push the vegetables to one side of the pan.

   - Pour the beaten eggs into the empty side of the pan and scramble them until they are fully cooked.


5. **Combine Ingredients:**

   - Add the cooked chicken back into the pan with the vegetables and scrambled eggs.

   - Add the cooked rice, breaking up any clumps with a spatula or wooden spoon.

   - Pour the soy sauce, sriracha sauce, and oyster sauce over the rice. Stir everything together until the rice is evenly coated with the sauces.


6. **Finish and Serve:**

   - Drizzle the sesame oil over the fried rice and mix well.

   - Add the chopped green onions and season with salt and pepper to taste.

   - Remove the pan from the heat.


7. **Garnish and Serve:**

   - Garnish with chopped cilantro and serve with lime wedges if desired.
